Vegan “Buttermilk” Biscuits and Sausage Gravy
“Buttermilk” Biscuits
- 2 1/4 cups flour (I used Bob’s Red Mill Unbleached flour)
- 3 Tbsp. baking powder
- 1/4 cup Earth Balance
- 1 tsp. salt
- 1 cup unsweetened non-dairy milk (I used soymilk)
- 1 Tbsp. apple cider vinegar
Preheat oven to 400 degrees F. Spray a baking sheet with non-stick cooking spray and set aside.
Combine the soymilk and vinegar in a small bowl and set aside.
In a medium bowl, add the flour, baking powder, and salt. Then add the Earth Balance and cut in using a pastry cutter or a fork.
Pour in the milk mixture and stir until combined. Don’t stir too much, just until the dough forms.
Sprinkle flour on the surface you’ll be working on. Place the dough on the floured surface and, using a rolling pin, roll the dough out to 1/2 inch thick (about 9 inches in diameter).
Using a biscuit cutter or an overturned drinking glass, cut out the biscuits and place them on the baking sheet.
You’ll need to roll the dough out a couple more times, using the leftovers. I ended up with 13 biscuits. I made the last one by forming the rest of the dough into a biscuit shape.
Bake at 400 degrees F for 15-20 minutes.
