It’s been hot here the last few days. We’re talking summer weather hot. It certainly doesn’t feel like the first few days of Fall around our home, aside from the gigantic orange pumpkin growing in our garden.
When it’s hot like this, I don’t feel like cooking because it makes the house too hot. But, for some reason, today I felt like making cookies. I looooove salty foods and almost never even think about making a dessert.
Chocolately Peanut Butter No-Bake Cookies
- 2 cups organic sugar
- 1/2 cup unsweetened soymilk
- 1/2 cup vegan butter (i.e. Earth Balance), melted
- 1/2 cup cocoa
- 1/2 cup peanut butter
- 3 cups uncooked old-fashioned oats
- 1 tsp. vanilla
In a medium saucepan, mix sugar, soymilk, cocoa, and melted butter together.
Bring to a boil. Boil for 2 minutes, stirring constantly.
Take off the heat and add peanut butter.
Stir until melted.
Add oats and vanilla and stir until mixed together.
Using two spoons, drop by spoonful onto waxed paper that you’ve spread onto a counter or table.
