  • 1 young zucchini squash
  • 1-2 tomatoes
  • ½ onion
  • broccoli
  • 4 oz. hard cheese
  • garlic
  • 1 bunch greens (I use parsley and dill)
  • 2 T vegetable oil
  • Spices (I use a mixture of Italian herbs)
  • Salt to taste

A very tasty casserole made from a very simple vegetable, zucchini. This is a lean vegetable dish suitable for vegans and vegetarians, as well as dieters and those who simply prefer a healthy diet. In addition, it turns out very, very tasty! Summer, I love you. I love fruits and vegetables. During this time, I’ve developed many ideas for delicious dishes. Now that the early zucchini is being sold, I recommend treating yourself and cooking a casserole!


Step 1

Preheat the oven to 200° C (392° F) and start prepping the vegetables. Cut the zucchini into slices, the onion into half rings, the tomato into slices or as you like, and finely chop the greens. Transfer the chopped vegetables into a deep bowl, add broccoli, drizzle with vegetable oil, press 2-3 cloves of garlic, and mix in spices, pepper and salt. Mix well. Transfer to a baking dish and sprinkle with grated cheese (or if using slices, like I did, just put them on top). Cook 30-40 min.
