  • 2 1/4 cups flour (I used Bob’s Red Mill Unbleached flour)
  • 3 Tbsp. baking powder
  • 1/4 cup Earth Balance
  • 1 tsp. salt
  • 1 cup unsweetened non-dairy milk (I used soymilk)
  • 1 Tbsp. apple cider vinegar


Step 1

Preheat oven to 400 degrees F. Spray a baking sheet with non-stick cooking spray and set aside. Combine the soymilk and vinegar in a small bowl and set aside.

Step 2

In a medium bowl, add the flour, baking powder, and salt. Then add the Earth Balance and cut in using a pastry cutter or a fork.

Step 3

Pour in the milk mixture and stir until combined. Don’t stir too much, just until the dough forms.

Step 4

Sprinkle flour on the surface you’ll be working on. Place the dough on the floured surface and, using a rolling pin, roll the dough out to 1/2 inch thick (about 9 inches in diameter). Using a biscuit cutter or an overturned drinking glass, cut out the biscuits and place them on the baking sheet.

Step 5

You’ll need to roll the dough out a couple more times, using the leftovers. I ended up with 13 biscuits. I made the last one by forming the rest of the dough into a biscuit shape.

Step 6

Bake at 400 degrees F for 15-20 minutes.
