  • 2 slices Cracked Wheat Sourdough Bread
  • Daiya Cheddar or Mozzarella Style Shreds
  • sliced pickles, blotted dry
  • 3 tomato slices, blotted dry
  • 1/2 avocado, mashed
  • Earth Balance
  • pepper, to taste


Step 1

Spread Earth Balance on one side of each slice of bread. Lay one slice down in a skillet. Sprinkle 1/4 cup Daiya cheese on top of bread. Lay pickle slices and tomato slices on top of cheese. Sprinkle a little more cheese on top of the pickles and tomatoes. Add a little pepper, to taste, and place second piece of bread on top, with Earth Balance side facing up.

Step 2

Grill on medium heat for 3-4 minutes. Slide a spatula under the sandwich and place your fingers on the top of the sandwich to hold it together. Carefully turn the sandwich over. Yes, your fingers will get slimed by the Earth Balance, but at least your sandwich fillings won’t go flying. Cook for another 3-4 minutes.

Step 3

Transfer the sandwich to a plate. Lift the top piece of bread off. Top the tomatoes and pickles with the mashed avocado.

Step 4

Replace bread and slice sandwich in half.
