- 2 cups organic sugar
- 1/2 cup unsweetened soymilk
- 1/2 cup vegan butter (i.e. Earth Balance), melted
- 1/2 cup cocoa
- 1/2 cup peanut butter
- 3 cups uncooked old-fashioned oats
- 1 tsp. vanilla
In a medium saucepan, mix sugar, soymilk, cocoa, and melted butter together.
Bring to a boil. Boil for 2 minutes, stirring constantly. Take off the heat and add peanut butter. Stir until melted.
Add oats and vanilla and stir until mixed together.
Using two spoons, drop by spoonful onto waxed paper that you’ve spread onto a counter or table.
