Ingredients

  • 1.5 c. dry chickpeas
  • ¼ – ⅔ c. sesame seeds
  • 3 cloves garlic
  • 3 T vegetable oil
  • 1 lemon
  • salt to taste
  • spices (paprika, freshly ground black pepper, ground cumin and coriander, all to taste)

Notes

Is hummus a snack or a full meal? The main misconception about hummus is that it is just a snack. Around here, hummus is usually served in restaurants before the main meal. Most often, it is accompanied by pickles and pita bread. It’s not served with forks or spoons. You tear off a piece of the pita, scoop up the hummus, and put it in your mouth. Do not forget that hummus is quite high-calorie, and if this is an appetizer, then be careful: the main course may be unnecessary. How else can I eat hummus? Hummus can be served with toasted bread, fresh pita, or chips, plus fresh vegetables. Hummus will dress up your table for lunch and dinner. It goes well with fresh or canned vegetables or mushrooms, emphasizing and highlighting their taste and aroma. I like to slice a red bell pepper and dip it in hummus. Try to make hummus at home!

This is a very popular dish, and I will tell you all the secrets of how I cook it. This recipe is very simple! Hummus is a very healthy dip with a uniform creamy texture. Hummus is made from chickpeas – Turkish peas.

Method

Step 1

1. It’s better to cook the chickpeas in advance. Rinse them well and soak for 10-15 hours.

Step 2

They will have absorbed the water. Rinse them well and add fresh water. Cook the chickpeas for 2 hours without salt or spices.

Step 3

Lightly fry the sesame seeds until golden brown. You can also use a ready-made sesame paste called tahini, or you can make it yourself.

Step 4

Squeeze the juice from the lemon.

Mix sesame seeds with garlic, lemon juice and olive oil and blend in a blender until smooth

Step 6

Add cooked chickpeas and, if necessary, add stock.

Add salt and spices to taste and mix well. If you use large spices (cumin, dried herbs, coriander) as seasoning, grind them in a mortar or using a mill.

Step 8

Serve hummus with a little olive oil and sprinkle with spices.
