Ingredients

  • 20 red potatoes (5lbs.)
  • 1 green bell pepper, diced
  • 1/2 large white onion, diced
  • 2 cups Vegenaise
  • 1/8 cup yellow mustard
  • 2 tsp. white vinegar
  • 1 tsp. salt
  • 1/2 tsp. pepper
  • 1/8 tsp. celery seed
  • 2 Tbsp. dried dill
  • paprika

Method

Step 1

Put the potatoes in a large pot and fill it with water until it covers the potatoes. Bring to a boil on the stovetop. Boil for 20 minutes, or until tender.

Step 2

Pour the hot water out and fill with cold water. Add ice cubes and let them sit in the ice water bath until they’re cool. Cut the potatoes into 1/2-inch cubes. Put them into a large bowl. Add the rest of the ingredients. Stir to mix well.
