- 1 small zucchini, sliced into half-moon shapes
- 2 tomatoes, diced
- 1/4 cup diced onion
- 1/3 cup sliced olives
- 1/3 cup pizza sauce
- 1/8 to 1/4 cup Daiya Mozzarella Style Shreds or Daiya Cheddar Style Shreds (or a combo of both), optional
More ingredient suggestions are mushrooms, spinach, cannellini beans, artichoke hearts, green onions, eggplant, yellow squash, bell peppers, jalapenos, black beans, etc. You can also substitue barbecue sauce for the pizza sauce. If using an oven or toaster oven, preheat to 350 degrees F.
Oven cooking method: In an 8×8-inch baking dish, spread the pizza sauce in the bottom of the dish. Add the vegetables and sprinkle the cheese on top.
Bake at 350 degrees F for 25 minutes.
Put it in a bowl and enjoy!
Stove-top cooking method: In a medium skillet, add 1/4 cup water, onions, and zucchini. (If you’re using bell peppers, mushrooms, eggplant, yellow squash, jalapenos, artichoke hearts, etc., add them now). Water saute over medium-high heat for 5 minutes. Add the pizza sauce, olives, tomatoes. (If you’re using green onions, spinach, beans, etc., add them now).
Reduce heat to medium and cook for an additional 3 minutes. Add the cheese and stir to combine. Cook for 1 minute, or until cheese is melted. Put it in a bowl and enjoy!
