- 1 can black beans, drained and rinsed
- 1 can corn, drained
- 1 small zucchini, diced
- 2 small tomatoes, diced
- 1/4 cup diced red onion
- juice from 2 small limes (3 Tbsp.)
- 1/4 cup diced cilantro
- 1 avocado, sliced
- 8-16 small flour tortillas or corn tortillas
- salsa for topping, optional
Put the beans, corn, zucchini, tomatoes, onion, lime juice, and cilantro in a medium sized bowl and stir to combine.
If using corn tortillas, wrap 8 tortillas in damp paper towels and microwave for 1 minute. Scoop a spoonful or two of vegetable mixture onto each tortilla and top with a couple avocado slices. Drizzle a little salsa on top, optional. (We didn’t use the salsa.)
I accidentally bought corn tortillas that have gluten in them (and I’m doing a 4-week gluten elimination/reintroduction diet), so my dinner was a Cool Summertime Salad instead of soft tacos and it was delicious. I love the flavor combination of lime and cilantro.
