  • 6 garlic cloves, minced
  • 3 lb. ripe garden tomatoes
  • 2 tbsp. lemon juice
  • 1 1/2 tsp. salt
  • 1 tsp. sugar
  • 1/2 tsp. black pepper
  • 1 lb. dried angel-hair pasta
  • 1/2 fresh basil, chopped
  • 1/2 fresh basil, chopped
  • Pinch dried basil


Step 1

Core and coarsely chop 2/3 of tomatoes. Halve remaining tomatoes crosswise, and then rub cut sides of tomatoes against large holes of a grater set in a large bowl, reserving pulp and discarding skin. Toss pulp with chopped tomatoes, garlic, lemon juice, salt, sugar, pepper, dried oregano, dried basil, and fresh basil.

Step 2

Let stand until ready to use, at least 10 minutes. In the meantime, cook pasta according to package directions. Top with tomato sauce. Tomato mixture can stand at room temperature up to 2 hours.

Mmm! Fresh and bursting with tomato flavor. I LOVE this sauce. For a completely raw meal, try the sauce on top of raw zucchini “pasta”.
