Quinoa, avocado and mango salad

The quinoa, avocado and mango salad is very attractive because of its colorful ingredients and nutrients. Combine the sweetness of mango with the powerful nutrients of quinoa. This Caribbean and Andean fusion are highly nutritious and light. You can add other vegetables of the season.

As we see, this salad has important nutritional properties because quinoa is part of the so-called “superfoods”. This seed, which is usually confused with a cereal, is a rich source of vegetable proteins. Quinoa also provides a significant amount of nutrients to the body. It has abundant iron, magnesium and calcium, important minerals for bones and joints.

On the other hand, avocado also has an important set of nutritional properties. Among them stand out is a rich source of potassium. Avocado has more potassium than bananas; Potassium helps expel salt from the body. Mango is a nutrient-rich fruit. It contains vitamins A, C, and K, in addition to the vitamins of group B. It also contains minerals such as calcium, phosphorus, and magnesium.

Ingredients:

  • Half a cup of quinoa
  • Half avocado
  • Half Zucchini
  • 1 lemon
  • 1 small tomato
  • 1 mango
  • Spinach
  • Salt
  • Pepper

Mango Salad

Soak 10 minutes after carefully washing the quinoa. When the water starts to boil, add the quinoa and cover, letting it simmer for 15 minutes. After this time, remove from heat without uncovering. Reserve.
Cut the tomato adn Zucchini into small squares. Reserve. Remove the shell from the mango and cut the pulp into medium dice. Reserve.

Squeeze the juice of a lemon in a small bowl, add salt and pepper to taste. Add half a teaspoon of mustard and mix. Reserve.


Add the quinoa to a medium bowl and add the zucchini, tomato, and mango. Mix.
Remove the avocado peel and cut it into medium dice after removing the seed. Add to the bowl along with the quinoa and the other ingredients.
Add the lemon juice with mustard and mix. Finally, chop the cilantro finely and add on the salad.
