Mud Pie Cake
Adapted from a SparkPeople recipe
- 1 cup all purpose flour
- 1/2 cup whole wheat flour
- 1/2 cup sugar
- 1/4 cup unsweetened applesauce
- 1/4 cup unsweetened cocoa powder
- 1 tsp. baking soda
- 1/2 tsp. salt
- 1/3 cup oil
- 1 cup water
- 1 Tbsp. distilled white vinegar
- 1 tsp. vanilla extract
- 5 Tbsp. vegan chocolate chips
Preheat oven to 350 degrees F.
Spray a 9-inch cake pan or 9-inch pie plate with nonstick cooking spray and set aside.
In a medium bowl, add all of the ingredients except the chocolate chips. Stir or whisk until smooth.
Pour the mixture into the cake pan or pie plate.Sprinkle chocolate chips on top.
Using a fork, poke the chocolate chips down into the middle of the batter.
Bake at 350 degrees F for 25 minutes.
(Clearly I didn’t do a good enough job of poking the chips down. I thought they’d sink while the cake baked.)
Let cool for 5-10 minutes and cut into 12 slices.
