Everything-But-the-Kitchen-Sink Wraps

Search through your fridge and pull out anything that would even remotely taste good wrapped up in a tortilla.  The possibilities are endless.  Here’s a list of suggested ingredients, but I wouldn’t use them all at the same time!:

Ingredients

  • Tortillas (I usually use Mission Spinach Herb or Tomato Basil Wraps, but any kind of tortilla is fine)
  • Hummus for spreading on the tortilla
  • Tofutti Better Than Cream Cheese for spreading on the tortilla
  • Vegenaise for spreading on the tortilla
  • cucumber slices
  • tomato slices
  • shredded carrots
  • olive slices
  • artichoke hearts
  • sundried tomatoes
  • sliced green onions
  • onion slices
  • Wild Wood SprouTofu, sliced
  • Lightlife Fakin’ Bacon, cooked and chopped
  • spinach
  • lettuce
  • salad mix
  • cabbage
  • pickle slices
  • Bac’n Pieces
  • avocado
  • salsa
  • Vegan Ranch dressing or another favorite dressing drizzled over toppings
  • leftover taco seasoned Boca Crumbles

Spread hummus, Vegenaise, or Better Than Cream Cheese over the entire surface of the tortilla.  Down the middle, place cucumbers, tomato slices, spinach and whatever other large, flat toppings you’re using.  Then, layer all of your other toppings down the middle.  Drizzle a little salad dressing over the toppings (optional).  Roll up and slice.  The spread on the tortilla will help to keep it stuck together and rolled up.
