The title “Makeover Magic” really only applies to the very beginning of this post, but I liked the sound of it, so I went with it. Last night I spent some time giving my Recipe Page a much-needed makeover. I added a photo to each recipe name in order to make it easier to identify them. So, don’t forget to check it out.
English Muffin Pizza
- 1/2 whole wheat English muffin
- 1-2 Tbsp. pizza sauce
- 1 Tbsp. Daiya Mozzarella Style Shreds
- sliced black olives
- sliced grape tomatoes
- diced white onion
- 1 Tbsp. Daiya Cheddar Style Shreds (to hold all the toppings on)
Bake at 350 degrees F for 20 minutes.
As with any pizza, the possibilities are endless. Experiment with all kinds of different toppings. I love to eat them with a salad on the side. Or eat a BIG salad with a little pizza on the side.

Italian Salad with Daiya Cheese croutons and homemade Italian Dressing
I was going to make a gigantic Italian salad and Italian dressing tonight for dinner, but the grocery store was OUT OF fresh basil. I guess I didn’t have good luck at the store today. I can’t wait until the summer when we have another giant basil plant growing in our backyard. I’ll be eating this salad every DAY.
So, instead, tonight, Sweet Daddy and I are eating from one of our favorite nearby restaurants…Tokyo Dori. He’s picking it up on his way home from work and I can’t wait!
Tofu stir-fried with mixed vegetables over rice
