Dill Potato Salad

  • 20 red potatoes (5lbs.)
  • 1 green bell pepper, diced
  • 1/2 large white onion, diced
  • 2 cups Vegenaise
  • 1/8 cup yellow mustard
  • 2 tsp. white vinegar
  • 1 tsp. salt
  • 1/2 tsp. pepper
  • 1/8 tsp. celery seed
  • 2 Tbsp. dried dill
  • paprika

Dill Potato Salad

Put the potatoes in a large pot and fill it with water until it covers the potatoes.  Bring to a boil on the stovetop.  Boil for 20 minutes, or until tender.

Pour the hot water out and fill with cold water.  Add ice cubes and let them sit in the ice water bath until they’re cool.
Cut the potatoes into 1/2-inch cubes.  Put them into a large bowl.
Add the rest of the ingredients.  Stir to mix well.
