(a mix between a quesadilla and a burrito) put it on a plate and add a couple spoonfuls of beans to the top of the cheese.
- 1 big tortilla wrap
- refried beans
- 1/4 cup Daiya cheese
- 1/2 avocado, mashed or diced
- 1/2 cup salad mix
- diced red onion
- hot sauce
Put the tortilla in a dry skillet and heat over medium heat for 2-3 minutes. Flip it over and put 1/4 cup Daiya cheese down the center of the tortilla (or more if you want it even more like a quesadilla). Heat over medium heat for another 2-3 minutes.
In the meantime, put the refried beans in a saucepan and heat over medium heat. I always mix in a little water (2 Tbsp.) to make the beans more creamy. **(This tip was told to me by my brilliant and amazing cousin Heidi) 😉
When the tortilla is heated up, put it on a plate and add a couple spoonfuls of beans to the top of the cheese. Add the rest of your toppings. Get creative. Clean out your fridge and add anything you think might taste good. Leftover rice and veggies would be delicious.
Roll one end of the tortilla up and then roll both the left and right sides in. Leave the top open. This is the hard part. If you’re anything like me, you always fill your burritos too full. This one was no exception. I had to use a toothpick to keep it together.
